Proper Homemade Oatcakes

I find it quite amazing that not everyone makes these. Homemade oatcakes are really easy andĀ fast to make and taste so much better than shop ones. I don’t like shop ones at all, but these are well yummy (I think it’s the butter!)

  • 280g fine oatmeal (+salt/pepper if you like)
  • 70g butter (or oil, but butter is better)
  • 120ml of water
  • Flour for rolling
  1. Put the oatmeal in a bowl add a little ground pepper & salt if you fancy
  2. In a small heat the butter and water until boiling /melted (best not to microwave, sometimes it explodes)
  3. Mix the hot liquid into the oatmeal
  4. Flour the table and the rolling pin (use plenty of flour)
  5. Tip the hot oaty mix onto the floured table, work quickly as the mix gets harder to roll out as it cools. Roll to about 3mm thick.
  6. Press out discs and place on baking sheet (sheet doesn’t need to be oiled)
  7. Bake at 180 C for 20 to 25 mins until dry and a little bit brown, if they’re soggy when you press them they’re not done
